6 slices of bacon, diced
1 bag frozen O’Brien potatoes
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
1 rotisserie chicken, meat removed and pulled or chopped
1 jar TRUFF Spicy Mayonnaise
1 can evaporated milk
2 eggs
2 cups cheddar cheese, shredded
1 cup blue cheese crumbles
1/3 cup fresh scallions, chopped

This is not your average casserole!
Our TRUFF Spicy Mayonnaise is combined with cheese, bacon, potatoes, and rotisserie chicken to create a hearty, cozy casserole that is perfect for the winter months.
Instructions
Preheat oven to 350°F.
Place bacon on a prepared sheet and cook for 10 minutes or until the bacon is crisp.
Remove the bacon from the oven and set aside to drain.
Place potatoes in a casserole dish and sprinkle with garlic powder, onion powder, paprika, and salt.
Top the potato layer with rotisserie chicken.
Place mayo, evaporated milk, and eggs in a bowl and whisk to combine.
Pour the mixture over the chicken and sprinkle with shredded cheddar and blue cheese crumbles.
Place in the oven, uncovered, and bake for 45-55 minutes or until bubbly and lightly browned.
Remove from the oven and set aside to rest for 10 minutes before topping with the scallions and bacon.
