Ingredients

Blue Cheese Dressing:

¼ cup mayonnaise

¼ cup sour cream

¼ cup blue cheese crumbles

1 tablespoon lemon juice

1 tablespoon whole milk

1 tablespoon fresh parsley, chopped

1 tablespoon fresh chives, chopped

2 teaspoons TRUFF Original Hot Sauce

1 garlic clove, peeled and minced

Salt and pepper, to taste

BBQ Salmon:

¼ cup ketchup

2 tablespoons sweet chili sauce

1 tablespoon Dijon mustard

2 teaspoons TRUFF Original Hot Sauce

12 ounces salmon fillet

8 cups salad greens

1 cup cherry tomatoes, halved

½ cup cucumbers, sliced

½ cup red onion, peeled and thinly sliced

1 avocado, peeled and sliced

4 hard boiled eggs, peeled and halved

6 slices bacon, cooked and chopped

BBQ Salmon Cobb Salad with TRUFF Blue Cheese Dressing

We put a TRUFF spin on the classic cobb salad, using our TRUFF Original Hot Sauce in both the BBQ sauce-slathered salmon and the chunky blue cheese dressing. This fiery hot sauce, with all its black truffle-infused goodness, is the ideal ingredient for this recipe, pairing perfectly with the proteins, highlighting the fresh veggies, and ‘wowing’ the creamy salad dressing.

Instructions:

  1. To make the salad dressing, place mayo, sour cream, blue cheese, lemon juice, milk, parsley, chives, hot sauce, and minced garlic in a medium bowl, whisk to combine. Cover and refrigerate until ready to serve.

  2. Preheat a gas grill to medium heat or prep coals for a charcoal grill (brush the grill with a little oil to keep the salmon from sticking). While the grill is heating, place ketchup, sweet chili sauce, mustard, and hot sauce in a small bowl, whisk to combine. Pat the salmon dry with paper towels and coat in the BBQ sauce (save any leftover BBQ sauce for basting). Place the salmon on the grill and cook for 3 minutes per side or until cooked through, basting occasionally with any leftover BBQ sauce. Remove from the grill and set aside to rest for 5 minutes.

  3. Place the salad greens, tomatoes, cucumbers, red onion, avocado, hard boiled eggs, bacon, and BBQ salmon on a serving platter (or divide between plates). Serve with salad dressing on the side.
