Ingredients
Truffle Citrus Vinaigrette:
1/4 cup lime juice
1/4 cup orange juice
3 tablespoons honey
1/3 cup olive oil
1 teaspoon TRUFF White Truffle Oil
1/2 teaspoon salt
Pinch black pepper
2 cups quinoa, cooked according to the instructions on the package
2 cups fresh seedless watermelon, cut into bite-sized pieces
1 cup cucumbers, sliced
1/2 cup fresh parsley, chopped
1/2 cup fresh mint, chopped
1/4 cup feta cheese crumbles
2-3 tablespoons wasabi peas, crushed

When you add this vinaigrette to the Watermelon & Quinoa base, the result is a perfect, fresh salad that you’ll be whipping up all summer long!
Instructions
Place lime juice, orange juice, honey, olive oil, TRUFF White Truffle Oil, salt, and pepper in a bowl, and whisk to combine the vinaigrette. Set aside.
Place cooked quinoa, watermelon, cucumbers, parsley, mint, and feta in a bowl.
Drizzle with half of the vinaigrette and toss to coat and combine.
Sprinkle with crushed wasabi peas before serving.
