1/4 cup yellow onion, peeled and chopped
4 garlic cloves, peeled
1/4 cup fresh parsley
1 tablespoon fresh thyme
2 teaspoon fresh rosemary
1 1/2 teaspoons TRUFF Black Truffle Oil
1 tablespoon olive oil
1 rack of lamb
1 1/2 teaspoons salt
1/2 teaspoon cracked black pepper
1 tablespoon olive oil

Instructions
Preheat the oven to 425°F.
Place onion, garlic, parsley, thyme, rosemary, TRUFF Black Truffle Oil, and olive oil in the bowl of a food processor.
Pulse until the rub is finely minced and set aside.
Pat the lamb rack dry and set aside to rest for 30 minutes.
Season with salt and pepper.
Heat oil in a skillet over.
Add lamb and sear on all sides.
Remove the skillet from the heat, and coat the rack with the rub.
Roast the rack in the oven for 20 minutes.
Allow rack to rest for 15 minutes before slicing and serving.
