Ingredients

Dijonnaise:

1/4 cup TRUFF Mayonnaise

1/4 cup Dijon mustard

1 tablespoon lemon juice

Salt and cracked black pepper to taste

Roasted Sweet Potato Wedges:

1 large sweet potato, cut into wedges

1 tablespoon olive oil

1/2 tablespoon Montreal steak seasoning

2 teaspoons brown sugar

4 cups kale, stems removed and chopped

1/4 cup red onion, peeled and diced

4 bacon slices, cooked and chopped

3/4 cup cherry tomatoes, halved

2 hard boiled eggs, peeled and quartered

1/4 cup scallions, chopped

Sweet Potato Steakhouse Salad

What could make a classic steakhouse salad even better? Freshly roasted sweet potatoes and a truffle-infused dressing!

Our homemade dressing uses TRUFF Mayonnaise as the base and offers a rich, decadent flavor. The dressing is added to the typical ingredients like hard boiled eggs, red onion, tomatoes, and bacon. Plus, the addition of nutritious kale and sweet potato wedges take this salad to an unbeatable level.

Instructions


  1. Preheat oven to 400°F.

  2. Place TRUFF Mayonnaise, dijon mustard, and lemon juice in a bowl, whisk to combine and season to taste with salt and pepper.

  3. Place sweet potato wedges in a bowl and coat with olive oil, Montreal steak seasoning, and brown sugar.

  4. Transfer the seasoned wedges to a baking sheet and roast sweet potatoes for about 15 minutes.

  5. Remove from the oven and set aside to cool slightly.

  6. Divide kale, onion, bacon, tomatoes, eggs, and sweet potato wedges between plates.

  7. Drizzle salad with dressing and sprinkle with chopped scallions before serving.
