4 oz. goat cheese, softened to room temperature

1 tablespoon fresh chives, chopped

2 tablespoons fresh parsley, chopped

1 tablespoon fresh dill, chopped

2 1/2 teaspoons TRUFF Black Truffle Oil

3 cups baby arugula

1 tablespoon olive oil

2 teaspoons red wine vinegar

1 teaspoon honey

2 oz. prosciutto, thinly sliced

Goat Cheese Omelette

The star of this Goat Cheese Omelette is our Black Truffle Oil that effortlessly heightens this dish with luxurious umami flavor. Combined with creamy goat cheese, flavorful herbs, and tender prosciutto, this truffle-infused omelette will become one of your go-to meals to start the day!

Instructions

  1. Heat skillet over medium heat and lightly coat with cooking spray.

  2. Place two eggs in a small bowl and whisk to blend.

  3. Once the skillet is hot, add the eggs, and evenly distribute in the pan.

  4. Season with a pinch of salt and pepper, cover, and cook for about two minutes until firm.

  5. Place half of the goat cheese, chives, parsley, and dill in the center of the egg and carefully fold to cover.

  6. Drizzle the filling with one teaspoon of TRUFF Black Truffle Oil.

  7. Lift one of the edges of your omelette up and over the filling, creating a half-circle.

  8. Remove the omelette from the skillet and place on a plate.

  9. Repeat these steps with the remaining ingredients.

  10. Toss arugula in a bowl and coat with olive oil, TRUFF Black Truffle Oil, vinegar, and honey.

  11. Divide the salad and prosciutto between the plates and serve.
