Fiery Cauliflower Carbonara

Ingredients
6 slices bacon, diced
1 head cauliflower, cut into florets
3 eggs
¾ cup grated parmesan cheese, plus extra for serving
3 ounces TRUFF Original Hot Sauce

Instructions:
Cook bacon in a large skillet over medium-high heat until crisp. Remove the bacon from the skillet using a slotted spoon and set aside to drain on paper towels, reserve the pan drippings.
Fill a large pot with salted water and bring to a boil over high heat. Once boiling, add cauliflower, and cook for 5 minutes or until tender-crisp. Reserve ½ cup of the cooking water before draining the cauliflower.
Place eggs, parmesan, and hot sauce in a large bowl, whisk to combine.
Slowly add the reserved hot water to the bowl while whisking constantly.
Add the cooked cauliflower to the skillet with the bacon drippings and sauté for 2 minutes over medium heat.
Reduce the heat to low and add the egg mixture, stir until rich and creamy.
Sprinkle the cauliflower with bacon and parmesan cheese before serving.
