6 slices bacon, diced

1 head cauliflower, cut into florets

3 eggs

¾ cup grated parmesan cheese, plus extra for serving

Fiery Cauliflower Carbonara

We all love carbonara! That rich, creamy, bacon-spiked pasta dish inspired us to try our hand at crafting a veggie-full version featuring our TRUFF Original Hot Sauce and Cauliflower. The red chili pepper, black truffle, agave, and savory spice ingredient blend in our hot sauce packs a gourmet punch. That tasty heat does a great job of balancing the super rich and unctuous components of the carbonara sauce. This dish is greatly enjoyed on its own or can be an accompaniment to a large, crowd-worthy feast.

Instructions:

  1. Cook bacon in a large skillet over medium-high heat until crisp. Remove the bacon from the skillet using a slotted spoon and set aside to drain on paper towels, reserve the pan drippings.

  2. Fill a large pot with salted water and bring to a boil over high heat. Once boiling, add cauliflower, and cook for 5 minutes or until tender-crisp. Reserve ½ cup of the cooking water before draining the cauliflower.

  3. Place eggs, parmesan, and hot sauce in a large bowl, whisk to combine.

  4. Slowly add the reserved hot water to the bowl while whisking constantly.

  5. Add the cooked cauliflower to the skillet with the bacon drippings and sauté for 2 minutes over medium heat.

  6. Reduce the heat to low and add the egg mixture, stir until rich and creamy.

  7. Sprinkle the cauliflower with bacon and parmesan cheese before serving.
