Ingredients
Spicy Mayo Sauce:
2/3 cup TRUFF Spicy Mayonnaise
1 tablespoon lime juice
1 teaspoon lime zest, minced
1 garlic clove, peeled and minced
4 ears corn on the cob
Topping:
2/3 cup cotija cheese crumbles
4 tablespoons fresh cilantro, chopped
Pinch salt
Pinch of chili powder
Lime wedges, for garnish

Level up your typical grilled corn with the spiced-up elote variation!
Our TRUFF’d up elote features all the traditional ingredients like lime juice, garlic, and lime zest, in addition to our TRUFF Spicy Mayonnaise base.
Once we slather our corn with this mayonnaise base, we then sprinkle each with cotija cheese crumbles, fresh chopped cilantro, salt, and chili powder.
Instructions
Preheat grill to medium-high heat.
Place TRUFF Spicy Mayonnaise, lime juice, lime zest, and garlic in a medium bowl, and whisk to combine.
Keep refrigerated until ready to serve.
Remove half of the husks from the corn cobs.
Place the corn on the grill and cook for 15-20 minutes or until tender, rotating about every five minutes.
Remove from the grill and set aside to rest and cool slightly before removing the remaining husks.
Coat the exposed corn kernels with spicy mayo sauce.
Sprinkle with cotija crumbles, chopped cilantro, salt, and chili powder before serving.
Serve elote with lime wedges for a squeeze of citrus.
