Ingredients
4 oz. raw ground breakfast sausage
1/4 cup green bell pepper, diced
1/4 cup red bell pepper, diced
1/4 cup yellow onion, peeled and diced
1 garlic clove, peeled and minced
6 eggs
1 cup full fat cottage cheese
1/2 cup gruyere cheese, grated
1/2 teaspoon salt
1/4 teaspoon cracked black pepper
1 tablespoon TRUFF Habanero Hot Sauce
1 cup fresh spinach, chopped
Fresh chives, chopped, for garnish

These bites feature sausage, cheese, veggies, and our flavorful Habanero Hot Sauce. This sauce pairs perfectly with the rich ingredients in these bites, while simultaneously enhancing the sauteed bell peppers, onion, and garlic.
Cook these egg bites in large batches and freeze the extras for an easy on-the-go breakfast option!
Instructions
Preheat the oven to 350°F and spray a muffin tin with cooking spray, set aside.
Heat a skillet over medium heat.
Add sausage and cook for five minutes.
Add bell peppers, onion, and garlic and cook for five minutes.
Place eggs, cottage cheese, gruyere, salt, pepper, and TRUFF Habanero Hot Sauce in a bowl, whisk to combine.
Add spinach and the sausage-veggie mix to the bowl, stir to combine.
Divide the mixture between the muffin cups.
Bake for 20 minutes or until the egg cups are cooked and fluffy.
Set aside to cool on a wire rack.
Place egg cups on a serving platter and sprinkle with fresh chopped chives before serving.
