Ingredients

Avocado Blue Cheese Dressing:

1 avocado, peeled and chopped

1/2 cup blue cheese dressing

2 tablespoons fresh cilantro, chopped

1 tablespoon lime juice

Salt and pepper, to taste

Buffalo Shrimp:

2 tablespoons butter

2 garlic cloves, peeled and minced

1 lb. large raw shrimp, peeled and cut into bite-sized pieces

1/4 cup TRUFF Buffalo Sauce

8 corn tortillas, warmed

1 cup green cabbage, shredded

1/2 cup purple cabbage, shredded

1/2 cup celery, shredded

1/2 cup carrots, peeled and shredded

1/4 cup radish, shredded

1/4 cup fresh cilantro, chopped

Lime wedges, for garnish

Buffalo Shrimp Tacos

We’re back with a brand new taco recipe that’s sure to quickly become one of your favorites!

These shrimp tacos utilize our new Buffalo Sauce which features an artful balance of tanginess and umami flavor to take this dish to the next level. Our buffalo-denched shrimp is paired with creamy avocado blue cheese dressing and crisp fresh veggies to create a delicious dinner.

Instructions

  1. Place avocado, blue cheese dressing, cilantro, and lime juice in the bowl of a food processor.

  2. Blend until smooth and season to taste with salt and pepper.

  3. Transfer to a sealable container and refrigerate until ready to use.

  4. Melt butter in a large skillet.

  5. Once hot, add the garlic, and sauté for one minute.

  6. Add the shrimp and buffalo sauce to the skillet, stir to combine, and continue to cook for five to six minutes or until the shrimp are cooked through.

  7. Remove from the heat.

  8. Divide green cabbage, purple cabbage, celery, carrots, and radish between tortillas.

  9. Top with buffalo shrimp, avocado blue cheese dressing, and chopped cilantro before serving.

  10. Garnish with lime wedges.
