1 stick butter, softened
6 garlic cloves, peeled and minced
1 1/2 teaspoon fresh rosemary, minced
1 1/2 teaspoon fresh thyme, minced
3 lbs. beef tenderloin
2 1/2 teaspoon TRUFF Black Truffle Salt
1 teaspoon cracked black pepper
1 tablespoon olive oil

Instructions
Preheat the oven to 400°F.
Add softened butter, garlic, rosemary, and thyme to a bowl, stir to combine.
Wrap the butter and refrigerate until ready to use.
Tie the tenderloin with butcher twine and pat dry.
Set the tenderloin aside, at room temperature, to rest for 30 minutes.
Season the tenderloin with TRUFF Black Truffle Salt and pepper.
Heat oil over high heat in a skillet
Sear tenderloin on all sides.
Place the skillet in the oven and roast for about 15 minutes.
Dollop the tenderloin with the herb butter, and set aside to rest for 15 minutes.
Remove the butcher twine from the roast and slice into medallions before serving.
